PROBLEM TO BE SOLVED: To provide a dipeptide composition comprising isolated &bgr;-dipeptides or an isolated &bgr;-dipeptide mixture obtained by enzymatic proteolysis from a cyanophycin (CGP) or a CGP-like polymer having peptidic structures essentially comprising one or more &bgr;-dipeptide units comprising two of aspartic acid, arginine, lysine, glutamic acid, citrulline, ornithine and canavanine.SOLUTION: The invention provides a process for enzymatic production of a dipeptide composition from a cyanophycin (CGP) or CGP-like polymer preparation by degrading the polymer preparation with a CGPase. The invention also provides a dipeptide composition including &bgr;-aspartate-arginine and &bgr;-aspartate-lysine.SELECTED DRAWING: None |
