<P>PROBLEM TO BE SOLVED: To provide a method for cooling breads for speedily cooling baked breads while retaining excellent texture and flavor; and to provide the breads obtained by the method. <P>SOLUTION: The method for cooling breads is characterized by vacuum-cooling the breads after adding water to the surface of the baked breads. The method of adding water is preferably one of a method by spraying water to the surface of the breads, a method by placing the breads under an atmosphere in which water particles are diffused, or a method by placing the breads under a high-humidity atmosphere.
