Provided is a technique for obtaining a fibrous protein material in which cells are embedded at a high density, and with which it is possible to: make an extracellular matrix component contact the cells discretionarily; control the three-dimensional form; maintain the shape of a tissue after hydrogel removal; efficiently proliferate cells in a tissue; form intercellular interaction; and uniformly inseminate cells into a tissue. This method for producing a fibrous protein material comprises: continuously introducing a first aqueous solution in which sodium alginate and a protein have been dissolved and a gelling agent aqueous solution to a flow path structure that includes an inlet to which the first aqueous solution is introduced, an inlet to which the gelling agent aqueous solution is introduced, inlet flow paths connected to the respective inlets, a merging flow path where the inlet flow paths merge, and an outlet downstream of the merging flow path; forming a hydrogel by continuously gelling the first aqueous solution inside the flow path structure; and chemically crosslinking the protein included in the hydrogel outside or inside the flow path structure, and removing alginic acid included in the hydrogel. |
