PROBLEM TO BE SOLVED: To provide a dry food production method for relatively easily producing dry food having high restorability, without requiring a large-scale apparatus.SOLUTION: The dry food production method includes: immersing raw material into an electrolytic alkali ion water having a pH of 8 or more (an undiluted solution of the electrolytic alkali ion water or a solution thereof diluted with water); then immersing the raw material into a curdlan aqueous solution made by dissolving gelatinous curdlan in water; and finally subjecting the mixture to hot air drying processing while setting a temperature of the hot air to 40 to 60°C. As the gelatinous curdlan used in the curdlan aqueous solution, gelatinous curdlan is used which is made by dissolving curdlan in strong alkaline electrolytic alkali ion water having a pH of 12 or more and gelatinizing the mixture at normal temperature.SELECTED DRAWING: None |
