<P>PROBLEM TO BE SOLVED: To provide a sweetener composition which effectively suppresses unpleasant bitterness, harshness and astringency peculiar to a high-sweetness sweetener with a small amount of addition without changing a flavor inherent in baked food, and reproduces the same Maillard flavor, taste intensity and flavor profile as those when using sugar such as sucrose even if the high-sweetness sweetener is used. <P>SOLUTION: The sweetener composition for baked food containing a high-sweetness sweetener including (A) d-xylose and/or l-arabinose, (B) a sensory stimulation substance, (C) quinic acid or a composition containing quinic acid, (D) vanilla polyphenol or a composition containing vanilla polyphenol, (F) green tea polyphenol or a composition containing green tea polyphenol and/or (G) rosaceous plant polyphenol or a composition containing rosaceous plant polyphenol, is added to baked food containing the high-sweetness sweetener, so that unpleasant aftertaste of the high-sweetness sweetener is ameliorated and the same Maillard flavor, taste strength and flavor profile as those when using sucrose or the like are reproduced. <P>COPYRIGHT: (C)2012,JPO&INPIT |
