摘要 The present invention relates to a method for manufacturing a freeze-dried ramen. The freeze-dried ramen is manufactured by steaming noodles, obtained by mixing and kneading wheat flour, starchy powder, buckwheat powder, bean powder, and wild sesame powder and shaping the same, freezing the noodles at low temperatures (-50°C to -60°C) by using a freeze-drying technology, and manufacturing the freeze-dried noodles by vaporizing moisture of the frozen noodles in an ice state. The freeze-dried ramen includes a soup manufactured by using organic agricultural products which are carrots, burdocks, Chinese cabbages, shiitake mushrooms and so on as raw materials. The noodles are not fried with oil and do not include fat and cholesterol causing obesity and adult diseases. The freeze-dried ramen has blend and excellent taste and can be easily restored by addition of water when the freeze-dried ramen is boiled. The freeze-dried ramen is not deteriorated even after storage for a long time and thus has very excellent storage properties. The freeze-dried ramen is healthy food with appropriate quality compared to an existing ramen.
