A scapula incision device according to at least one embodiment of the present invention is a device for separating the scapula of a chicken carcass and the flesh adhered to the scapula from one another, and is equipped with: a fixing jig for positioning and immobilizing a chicken carcass from which the legs and insides have been removed; a fixing jig conveyor for forming a transport path for the fixing jig, and transporting the fixing jig along the transport path; a first detachment member provided so as to be capable of vertical movement above the transport path; a first drive device for moving the first detachment member in the vertical direction; and an elastic support part for elastically supporting the first detachment member so as to be capable of withdrawing to the downstream side of the chicken carcass in the transport direction. Furthermore, upon reaching the time at which the chicken carcass immobilized by the fixing jig arrives at a flesh separation location below the first detachment member, the first detachment member is lowered by operation of the first drive device, moves along the chicken carcass scapula surface, and separates the flesh adhered to the scapula therefrom.
