PROBLEM TO BE SOLVED: To provide a dough piece cutting method and device, which cut a generally triangular shaped dough piece from belt-like dough such as a croissant dough before being wound up, and which, more in detail, can prevent the dough piece from being formed while bent with respect to a desired shape when the dough piece is cut.SOLUTION: A cut piece cutting device 1 of a dough piece cuts a dough piece 3 from a dough sheet 2 and includes: a conveyance device 26 conveying the dough sheet 2; a blade 27 arranged on an upper side of the conveyance device 26 and forming a slit in a direction along a width direction of the dough sheet 2 or in an oblique direction with respect to the width direction; and a circular cutter 12 arranged on an upper side of the conveyance means along a conveyance direction R and rotated in a higher speed than a conveyance speed V1 of the conveyance device 26.
