Punching out dough pieces from a dough sheet (6) lying on a conveyor belt (5), comprises (i) moving a punching tool (13) initially for punching out dough pieces from the top from a starting position downwards until the punching tool penetrates the dough sheet to the conveyor belt, (ii) sucking dough pieces by means of a suction device (3) from below against the air-permeable conveyor belt and maintaining in this position, and (iii) returning the punching tool in its upper starting position and finishing the suction of dough pieces. An independent claim is also included for a device for punching out dough pieces from the dough sheet lying on the conveyor belt comprising a cutting table (1), and a punching device, which has a punching tool attachable on top of the dough sheet for carrying out the above mentioned method, where (a) the conveyor belt extends on the cutting table, (b) the cutting table has perforated table top at least in an operating area of the punching device, (c) the time-activatable suction device is mounted under the table top, (d) the time-activatable suction device sucks air through the perforation of the table plate in the activated state, and (e) the conveyor belt extending above the table top is permeable to air. |
