摘要 Disclosed is a method of protecting a dairy product, including fresh milk and milk powder from oxidation by adding an efficacious amount of a composition comprising of rosmarinic acid. In some embodiments, the rosmarinic acid is a water-soluble natural plant extract. For protecting milk powder from oxidation, the method comprises of adding to fresh milk an efficacious amount rosmarinic acid and drying the composition to create milk powder. The disclosed composition enhances the shelf-life of diary products such as fresh milk and milk powder.
