The present invention relates to a method for preparing red pepper paste by using sap of Acer mono and, more specifically, to a method for preparing high-quality red pepper paste, wherein sap of Acer mono having high sweetness and high content of mineral, Lycium fruit juice and Lentinus edodes powder are used to prepare high-quality red pepper paste having improved savory taste and flavor, nutritional excellence, and high antioxidant activity. According to the Acer mono sap red pepper paste of the present invention, Lycium fruit juice and Lentinus edodes powder are added to provide high-quality red pepper paste having an excellent color impression of bright red and improved savory taste and flavor. Sap of Acer mono which is rich in various minerals is used to provide high-quality red pepper paste having nutritional excellence and high antioxidant activity so that the red pepper paste is expected to be effective on diet and have an effect of preventing chronic adult diseases, such as alleviating hyperlipidemia. |
