The present invention relates to a method for the production of a viscosity regulator by means of incorporation of hydrophobic and hydrophilic groups into a starch molecule. The invention further relates to viscosity regulators produced in such a manner, and their use. The viscosity regulators according to the invention may be used as emulsifiers, or as thickening agents of systems containing surfactants, such as in cosmetic or pharmaceutical preparations.
