A production method of quick-cooking functional cereals and vitamin rice are provided to enable consumers to quickly cook cereals without soaking them in water or boiling. A production method of quick-cooking functional cereals and vitamin rice comprises the steps of: (a) putting cereals into a physiological-activation apparatus(13) through a supply pipe(18) and a flux control shutter(11) from a hopper tank(10), and soaking the cereals in water; (b) setting physiological-activation conditions(a constant temperature of 18~20°C, a constant humidity of 80~90%, and a grain moisture content of 35~40%) in an automatic-control monitor(16); (c) physiologically activating the cereals for 8hr till the lag phase; (d) producing quick-cooking functional cereals by using the functional property-enhancing effect and grain moisture content of the physiological-activation step; and (e) polishing brown rice with enhanced functional properties to produce vitamin rice with embryo buds and an aleurone layer.
