FIELD: food industry. ^ SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for extraction of caraway by liquid nitrogen with corresponding miscella separation. In addition, the method involves drying girasol-sunflower in microwave field at preset process parametres and roasting yacon, drying rosehips, apples and pears in microwave field at preset process parametres and drying them up by convective method, roasting barley grains. Besides the method provides for mixing girasol-sunflower, rosehips, barley grains, apples and pears, pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen. ^ EFFECT: method allows to produce new flavoured coffee drink according to nonwaste technology. |
