PROBLEM TO BE SOLVED: To provide a method for producing a fermented milk, by which the concentration (production amount) of a polysaccharide produced by microorganisms can be controlled. SOLUTION: The concentration of a polysaccharide in the fermented milk has been compared with various factors. Consequently, it has been found that factors related to the concentration of the polysaccharide produced by lactic acid bacteria and the like on the fermentation treatment of a raw material milk are the number of the microorganisms, acid degree, pH, and the like, and by the control of the factors, the concentration of the polysaccharide can indirectly be controlled. As a result, the fermented milk in which the concentration of the polysaccharide is a standard value can stably be produced. COPYRIGHT: (C)2011,JPO&INPIT |
