摘要 FIELD: food industry. ^ SUBSTANCE: group of inventions relates to manufacturing technique of coffee substitutes. The methods envisage preparation of the recipe components, extraction of the vegetable raw material envisaged by the method versions with liquid nitrogen with separation of the corresponding miscella, cutting dandelion roots, drying dandelion roots and grape refuses in microwave field at specified parametres of the process. Then dandelion roots are fried, grape refuses are additionally dried by convective method; dandelion roots and grape refuses are mixed, impregnation of obtained mixture by the separated miscella is performed with simultaneous pressure boost and depressurisation to atmospheric pressure with simultaneous freezing of the mixture and its cryomilling in the medium of nitrogen released. ^ EFFECT: methods allow to produce new flavoured coffee beverage according to a nonwaste technology. ^ 28 cl
