METHOD FOR DETERMINATION OF STABILITY OF WHITE TABLE AND CHAMPAGNE WINE MATERIALS TO CRYSTALLINE CALCIUM TURBIDITY

摘要

Method for determination of stability of white table and champaign wine materials to crystalline calcium turbidity includes sampling material for analysis, determination of saturation temperature, mathematical processing of data obtained and evaluation of stability. Additionally one determines mass concentration of sodium and magnesium ions, and stability is evaluated by the value of classification index of the group that is calculated by formula. At that range of values of classification index for the samples of the stable group is 69-102 a.u.
