<P>PROBLEM TO BE SOLVED: To provide a method of producing germinant barley which can improve the yield of germinant barley. <P>SOLUTION: In the process of producing germinant barley, a sufficient quantity of aleurone layers necessary for germination is secured in a first wheat polishing step S1, and hulls are mainly removed by 5-25 wt.% from the surface of the germinant barley to be germinated in a germination step S2. After that, the remaining hulls are sufficiently removed in a second polishing step S3. As part of the hulls are removed in the first polishing step S1, the remaining hulls can be easily removed, so that the force to be applied to crude barley can be reduced and endosperm is hardly crushed.
