<P>PROBLEM TO BE SOLVED: To obtain a glucosylceramide composition, which is suitable for functional foods, pharmaceutical products and the like and has stable qualities and from which foreign substances such as sterol glycosides are removed, and to inexpensively produce the glucosylceramide composition using, as a raw material, a material that has been eaten by human beings, is safe and is readily available. <P>SOLUTION: A glucosylceramide-containing composition is obtained from a yeast residue as a raw material after extraction of a yeast extract from torula yeast or the like, by extracting glucosylceramide with an organic solvent such as an alcohol from the yeast residue. <P>COPYRIGHT: (C)2013,JPO&INPIT |
