摘要 The present invention relates to a method for preparing fermented Curcuma longa having an enhanced gamma-aminobutyric acid (GABA) and peptides through blended fermentation. More specifically, the method includes the steps of: generating the peptides and mucilages through first Bacillus subtilis fermentation using Bacillussubtilis HA bacteria; and effectively converting the mono sodium glutamate (MSG) used as a substrate through second lactic acid bacteria fermentation using Lactobacillus plantarum K154 bacteria. The present invention can develop a food material having enhanced physiologically active substances including the peptides, mucilages, GABA, and probiotics through using the Curcuma longa and the blended fermentation of the first Bacillus subtilis fermentation and the second lactic acid bacteria fermentation.
