The purpose of the present invention is to provide a method for producing a saccharide derivative with which it is possible to hydrolyze substituents of the saccharide regioselectively and to produce large amounts inexpensively. Also provided is a modified saccharide derivative having excellent water resistance due to modification of the saccharide derivative. This method for producing a saccharide derivative is characterized by hydrolyzing a saccharide having two or more hydrolyzable substituents in the presence of a compound having a structure represented by general formula (1) and producing a saccharide derivative. General formula (1): (W)m(Y)n (In general formula (1), W represents an ion having an ionic radius with the range of 1.5-2.0 Å. Y represents a counter ion. m and n each independently represent integers of 1 or higher.)
