PROBLEM TO BE SOLVED: To provide a yeast extract having modified quality by a method for reducing unnecessary components in a yeast extract, in particular, by a method for reducing a thiamine content which involves browning and off-flavor generation.SOLUTION: A yeast extract manufactured by an active carbon treatment using active carbon having a specific surface area of 1000 m/g or more has a thiamine content of 100 μg/g or less on dry weight basis. A yeast extract manufacturing method includes treating a liquid yeast extract with active carbon having a specific surface area of 1500 to 1900 m/g and an average pore diameter of 1.5 to 2 nm, so as to have a thiamine content in the yeast extract of 50% or less of the thiamine content before the active carbon treatment. |
