The present invention relates to a method for manufacturing soft candy containing a red ginseng extract, and the soft candy containing a red ginseng extract manufactured thereby. The method for manufacturing soft candy containing a red ginseng extract comprises: a first step of obtaining a dissolved material by adding water to starch syrup and sugar and dissolving the same; a second step of obtaining a stirred milk fat material by stirring milk fat and an emulsifier; a third step of obtaining a sugar solution by stirring the dissolved material and the stirred milk fat material; a fourth step of concentrating the sugar solution; a fifth step of preparing a mixture by adding an additive to the concentrated sugar solution and stirring the same; a sixth step of aging the mixture; a seventh step of molding the aged mixture; and an eighth step of producing soft candy containing a red ginseng extract by forming a coating layer on the molded mixture. The soft candy manufactured by the method according to the present invention enables a user to consume nutrients of red ginseng by containing the red ginseng extract, and can provide chewing properties and suppress moisture discharge by forming the coating layer.
