摘要 PROBLEM TO BE SOLVED: To provide a kakinoha-sushi and production method thereof, capable of ensuring that no specific component is contained.SOLUTION: The kakinoha-sushi is formed by: forming rice 51 to which vinegar is blended for molding a rice formed body 61; mounting seasoned sushi materials to an upper surface of the rice formed body 61 for forming sushi; and wrapping the sushi with a leaf of persimmon. The rice 51 to which vinegar is blended by using a seasoning vinegar 41 formed by blending at least one or more kinds selected from functional sweetener 23, saccharide 24 or salt 25 with vinegar 20. The specific component included in the seasoning vinegar 41 is detected by specific component detectors 31, 32, in a step 1004, so that it is ensured that the rice 51 to which vinegar is blended includes no specific component.
