The present invention relates to a vegetable dielectric fluid and a production thereof. More specifically, the present invention relates to a vegetable dielectric fluid, a method for producing a vegetable dielectric fluid by using a solid acid catalyst, and an electric power device using the vegetable dielectric fluid. The vegetable dielectric fluid includes diglycerol esterified material obtained by performing esterfication on diglycerol with vegetable mixed fatty acid including C7-10 straight-chain or branched fatty acid and C12-20 straight-chain or branched fatty acid, and a flow point of the diglycerol esterified material is -40°C or less, and a flashing point is 300°C or more. According to the present invention, the vegetable dielectric fluid has an effect of exhibiting excellent insulation properties usable in an environmentally-friendly state and in a wide temperature range. The vegetable dielectric fluid can be produced at high yield by using a solid acid catalyst having excellent selectivity and activities.
