METHOD FOR PRODUCING CARROT EXTRACT

Provided is a method for producing a carrot extract which contains Rg3 at a high concentration, undergoes discoloration to a reduced extent and has excellent color stability. A method for producing a carrot extract, said method comprising the steps of: (1) extracting carrot while heating in water at 95 to 100°C for 0.5 to 50 hours; (2) adding ethanol to a thermal extract produced in step (1) in such a manner that the ethanol concentration in the extract becomes 60 to 90 vol%, and then removing precipitates to produce a crude carrot extract; and (3) purifying the crude carrot extract produced in step (2) in an adsorption column filled with a macroporous resin.
