The present invention provides a method for aging meat by using ocher water. The method comprises the following steps: obtaining ocher powder by hydraulically elutriating ocher; mixing 10 parts by weight of the ocher powder and 40 parts by weight of water; adding iron ions in the ocher powder solution to be precipitated in a scattered iron form for 6-10 hours, and obtaining ocher water having arsenic removed therefrom; and marinating and aging meat in the ocher water for 1-3 hours. According to the present invention, arsenic which is a toxic material of ocher water is removed to be safely used in foods, and aged meat is prevented from being rapidly decomposed by the properties of ocher water. The meat is always moist, and meat juice is fresh. Nutrition of meat and useful components of ocher water are harmonized, so a consumer can feel an improved texture and the health of the consumer can be improved. |
