The present invention relates to a method for manufacturing rice and rice flour for diet management, and rice and rice flour for diet management manufactured thereby and, more specifically, to a method for manufacturing rice and rice flour for diet management, which is performed in a method that fermented rice is coated with Garcinia cambogia peel extract (HCA), and to rice and rice flour for the diet management manufactured thereby. The method for manufacturing rice for diet management of the present invention comprises: an immersing step for immersing washed rice; a fermentation step for adding a fermented solution, which is composed of a combination of beneficial bacteria including lactic acid bacteria, to the immersed rice, and fermenting the same; a drying step for drying the fermented rice which is fermented in the fermentation step; and a HCA mixing step for mixing the dried rice dried in the drying step with the HCA. |
