PROBLEM TO BE SOLVED: To provide an instant dry seasoned-meat and production method thereof in which the food-texture and restorability that are the problem in the production method of instant dry seasoned-meat when a process for seasoning raw-material meat is simplified to one step, are improved and that has excellent food-texture and restorability even when the seasoning process is simplified to one step.SOLUTION: The problem is solved by an instant dry seasoned-meat production method in which a seasoning process for injecting or mixing a pickle solution obtained by mixing seasoning material and binding material, into the raw-material meat, heating the same with steam, freezing, cutting and drying the same, is simplified to one step, and in which the soluble solid content in the pickle solution obtained by mixing seasoning material and binding material, is adjusted to 22 to 38, and the pickle liquid is added to the raw-material meat by 45 to 80 wt.% with respect to the raw-material meat weight. |
