The present invention relates to a process for preparation of anthocyanin concentrates from the elderberry and other plant raw materials for use as a colorant in food, cosmetic and pharmaceutical products, in which the extraction of the colouring material from the raw material "in natura" is performed with water treated and acidified with citric acid and subsequent reduction of the content of sugars and solid impurities by enzymatic treatment or by physical action by osmosis.
