摘要 <P>PROBLEM TO BE SOLVED: To provide a pasty multifunctional food material using shell of a Crustacea, such as lobster, especially the tail part, as a raw material, and having both vivid tone of color (red color) and original taste and flavor of lobster, and to provide a method for producing the pasty food material. <P>SOLUTION: This method for producing the pasty food material includes a separation step of cooking in oil, shell of a Crustacea, especially the sixth abdominal segment, tail fan (telson and caudal appendage) followed by separating the shell from oil, a first crushing step of crushing the separated shell, an oil mixing step of mixing the separated oil with the shell after crushing, and a second crushing step of further crushing the crushed shell mixed with oil.
