The device has a blade (24) pivoting along a rotation axis (26) parallel to a cheese folding direction. The blade has an active part formed by a cord (28) e.g. piano cord, and displaced in a plane perpendicular to the folding direction. The length of the active part cuts the cheese section. The cord is connected to the blade by a dismountable connection unit. The blade has a V-shaped groove for housing the cord. A maintaining unit maintains the cord in the groove.
