摘要 The present invention relates to a method for preparing a slice of a duck ham used as a wrap food and, more specifically, to a method for preparing a processed duck meat product which can be taken easily anywhere outside the stereotype that duck meat is a smoked meat, wherein duck raw meat is ground in a grinder, a wine sauce and other additives are added and mixed with the ground meat and the treated meat is aged and then roasted. The method for preparing a slice of a duck ham used as a wrap food comprises: a first step for grinding duck meat and breeding duck breast meat in a grinder to make a ground duck meat; a second step for blending the ground duck meat with additives to make blended duck meat; a third step for mixing the blended duck meat with a wine-favored sauce and a salting agent to make mixed duck meat; a fourth step for aging the mixed duck meat to make salted duck meat; a fifth step for filling the salted duck meat into a casing to make filled duck meat; a sixth step for roasting the filled duck meat; and a seventh step for slicing the meat. Accordingly, utility of duck meat can be increased as a favorite food, the stereotype that duck meat is a smoked meat is broke, harmful fat ingredient thereof can be eliminated, the content of a unsaturated fatty acid which is easily dissolved in a body can be increased, the unique smell of duck meat and the softness of meat texture can be retained, thereby providing a slice product of duck meat which can meet a changing need of customers.
