摘要 <p>The present invention relates to a method for manufacturing spicy stir-fried chicken and, more particularly, to a method for manufacturing spicy stir-fried chicken by selecting one of red pepper paste seasoning and soybean sauce seasoning aged in the flesh of chicken legs according to preference of consumers. The method for manufacturing spicy stir-fried chicken includes: a spicy stir-fried chicken seasoning producing step of producing the red pepper paste seasoning and the soybean sauce seasoning which are inserted with respect to 5 kg of the flesh of the chicken legs; a spicy stir-fried chicken seasoning heating step of agitating and heating, at the same time, the produced spicy stir-fried chicken seasoning at 70-80°C for 4-5 minutes; a spicy stir-fried chicken seasoning cooling step of cooling the heated spicy stir-fried chicken seasoning at 20°C or lower; a chicken leg flesh marinating step of marinating 5 kg of the flesh of the chicken legs in the cooled spicy stir-fried chicken seasoning and mixing the same; a chicken leg flesh ripening step of ripening the marinated flesh of the chicken legs in an airtight container; a chicken leg flesh preliminary roasting step of preliminarily roasting the chicken leg flesh ripened with seasoning after placing the chicken leg flesh on a preliminary roasting plate; and a chicken leg flesh secondary roasting step of secondarily roasting the preliminarily roasted chicken leg flesh after sprinkling parsley powder on the same.</p>
