PROBLEM TO BE SOLVED: To provide a method capable of producing rice-form snack cereal having a texture different from that of puffed cereal, and a method capable of easily producing molded snack cereal in which rice grains are shown.SOLUTION: Provided is a method for producing rice-form snack cereal comprising: a stirring step of adding hot water to rice powder and performing stirring to obtain a substrate; a rice grain molding step of cutting the one obtained by working the substrate with a vacuum extrusion molding machine into a prescribed shape to obtain a rice grain-shaped molded body; and a fry step of frying the rice grain-shaped molded body with oil. The method further comprises: a mixing step of mixing a plurality of rice grain-shaped molded bodies after the frying step with a binder solution including maltodextrin having a dextrose equivalent of 10 to 18 and oxidized starch at a mass ratio of 50 to 99:50 to 1 of the maltodextrin: the oxidized starch to obtain a mixture; a molded body working step of working the mixture into a molded body having a prescribed shape; and a drying step of drying the molded body having a prescribed shape.
