<p>The present invention relates to a dried sea cucumber and a manufacturing method of the same wherein it is possible to dry a raw sea cucumber without a salting process or without an immersion using an acid solution, which is intended to increase an weight of a sea cucumber, thereby, it is possible to avoid in advance a loss of nutrients and harmful factors arising in the process of salting and immersion using an acid solution, natural colors unique to a sea cucumber can be literally maintained, a shape of a sea cucumber is made to become a straight shape naturally in the process of an intestine removal process, a boil-cooking process, and a drying process without an auxiliary tool, and natural colors and protrusions attributable to a sea cucumber are maintained. The manufacturing method of the present invention comprises a raw sea cucumber collecting process, an intestine removal process, a washing process, a boil-cooking process, and a drying process. In the intestine removal process, a raw cucumber is cut by 1 to 3 cm toward a head at an intermediate position of a body as a whole of the sea cucumber, if a shape of a sea cucumber is bent to one side, the sea cucumber is cut in the middle of an abdomen along the twisted shape. In the washing process, a sea cucumber, removed of an intestine, is washed by using only fresh water two or three times. In the boil-cooking process, a raw sea cucumber, which is washed, is put in a pot in a ratio of 60 to 70 parts by weight of a sea cucumber based on 100 parts by weight of fresh water, and boiled and cooked for 30 to 60 minutes at a temperature of 80 to 100°C. In the drying process, a raw sea cucumber, removed of moisture, is dried in an initial drying in a drying apparatus, which is in a vacuum state, at a temperature of 40°C or lower, in a humidity of 50% or lower, for 24 to 36 hours. Thereafter, the sea cucumber is treated with the boil-cooking process, and then dried naturally in the sun or in the shade in an airy place.</p> |
