<p>The present invention relates to a preparing method of kimchi with high contents of ornithine which increases ornithine contents by inducing an increase of the lactic acid bacteria belonging to the genus of weissella in the processes of preparing kimchi. The preparing method of kimchi with high contents of ornithine according to the present invention comprises the steps of: preparing kimchi by adding a condiment into main materials; and ripening prepared kimchi, wherein the step of ripening kimchi is to keep kimchi after ripening prepared kimchi for 42 to 50 hours at 14 to 16°C.</p> |
