PROBLEM TO BE SOLVED: To provide use of vanillin derivatives as a preservative, particularly in a cosmetic, dermatological, pharmaceutical, nutraceutical or oral cosmetic composition.SOLUTION: The present invention relates to the use of at least one compound of formula (I) as a preservative in a cosmetic, dermatological or pharmaceutical composition, where: R2 is a hydrogen atom or a methyl or ethyl group; and R3 is a C1-C12 linear alkyl group optionally substituted by a hydroxyl group, or a C2-C12 linear alkenyl group optionally substituted by a hydroxyl group. The invention also relates to certain novel compounds and to cosmetic, dermatological, or pharmaceutical compositions including the same.
