PROBLEM TO BE SOLVED: To provide a method for extracting a component of a specific raw material in a food product at short time, by using an inexpensive reducer having temperate reduction action.SOLUTION: A mixture obtained by mixing a food product to an extract including at least sulfite, is heated for extracting a component in the food product. The sulfite is one or more kinds selected from sodium sulfite, potassium sulfite, and ammonium sulfite. Preferably one kind of the sulfite is sodium sulfite. The extract includes one or more kinds of a solubilization adjuvant. |
