Substance mixture comprises (a) at least one starch derivative comprising high-amylose starches, dextrins and/or maltodextrins, (b) at least one bitter principle, and optionally (c) stabilizers, where (a) and (b) are present in a weight ratio of 1000:1-1:1. Independent claims are also included for: (1) production (M1) of the substance mixture comprising dissolving (b) in water, adding (a), vigorously stirring mixture and optionally adjusting to a suitable viscosity by adding (c); and (2) masking (M2) the bitter and astringent flavor of (b) comprising blending them with (a). |
