The present invention provides a system for producing dried wild edible greens, the invention comprising: a pre-treatment apparatus for blanching prepared materials to make a fine physical damage to vegetable tissues such that dried wild edible greens, to which moisture is easily absorbed, are produced; an immersion apparatus for immersing the pre-treated materials in an emulsion which is mixed of an oil having a concentration of 0.01 to 0.08% and water and emulsified; and a drying and puffing apparatus for irradiating microwaves to the immersion-treated materials or applying hot air so as to dry and puff thereof.
