PROBLEM TO BE SOLVED: To provide a substance derived from natural sources, having low toxicity and high safety and exhibiting remarkable dipeptidyl peptidase IV (DPPIV) inhibiting activity.SOLUTION: The water-soluble fraction of cheese include remarkable DPPIV inhibition activity and the activity increases with the increase of the aging period of the cheese. The water-soluble fraction of cheese contains a peptide having DPPIV inhibition activity. The DPPIV inhibitor is characterized by depressing blood sugar level by the antagonistic action to DPPIV. |
