<p>The present invention relates to Leuconostoc mesenteroides DSR1310 strain (KCCM11503P) with excellent acid resistance and salt resistance and uses thereof. A strain of the present invention has excellent acid resistance and salt resistance, low acid productivity, and excellent antimicrobial force. Accordingly, the present invention can be variously used in manufacturing a medicine for intestinal disorders, a probiotic, a food additive, and a fermented food, desirably Kimchi, comprising the strain and culture thereof. Therefore, Leuconostoc mesenteroides DSR1310 strain of the present invention can be used as a fermentation starter strain so as to manufacture a fermented food, desirably Kimchi.</p> |
