PROCESS FOR PRODUCING ACIDULATED 50% CONCENTRATED SOLUTION AND DRY POWDER OF PEPTIDES FROM PROTEIN PRODUCTS AND WASTE OF ANIMAL, FISH, AND AQUACULTURE ORIGIN

PROBLEM TO BE SOLVED: To provide a process for production of wet solutions of peptides concentrated to 50% or dry peptides, for human and animal consumption, using as raw material secondary products generated in the production of protein food.SOLUTION: The process comprises the following steps of with respect to the raw material from which fat has been extracted at a raw temperature: (a) milling the raw material and pumping it to heat exchangers; (b) heating the raw material; (c) centrifuging the raw material to form a product with a lower fat content; (d) pumping the product with lower fat content to digestion tanks; (e) modifying the pH of the product by adding acids or bases: (f) heating the digestion tanks and adding a mixture of proteolytic enzymes; (g) pumping the product once the enzymatic process is complete to a heat exchanger to increase the product temperature; (h) centrifuging the product to extract the remaining oil and separate the non-hydrolyzed solids and the liquid with soluble solids and peptides.
