PROBLEM TO BE SOLVED: To provide a manufacturing method of a refined sake with reduced glucide, with enhanced fermentation of unrefined sake for reduction in glucide. ! SOLUTION: The manufacturing method of a refined sake with reduced glucide includes: a preparation step of preparing an unrefined sake; and a fermentation step of fermenting the unrefined sake. In the fermentation step, the unrefined sake is forcibly agitated with high frequency. When an agitation blade is used for the agitation in the fermentation step, the circumferential rate at the leading edge of the agitation blade is set to 0.4 to 0.8 m/s. In the fermentation step, the unrefined sake is always agitated until the fourth day before squeezing.
