摘要 <p>The present invention relates to a manufacturing method of powdered bread, and more specifically, to a method for manufacturing powdered bread by using premix for baking including rice flour, a powder, and a green tea powder. The present invention comprises: a mixing step of mixing 25 to 55 parts by weight of the rice flour, 35 to 65 parts by weight of wheat flour, 1 to 10 parts by gluten, 0.5 to 1 parts by weight of improver, 30 to 45 parts by weight of the powder, 0.5 to 5 parts by weight of salt, and 5 to 10 parts by weight of sugar; a paste step of mixing 5 to 10 parts by weight of margarine, 1 to 5 parts by weight of raw yeast, 10 to 20 parts by weight of the green tea powder, 3 to 5 parts by weight of an egg, and 40 to 60 parts by weight of water with respect to 100 parts by weight of the premix for baking, and making paste; a first fermentation step of resting the paste at 20 to 30°C for one hour; a second fermentation step of removing gas from the primarily fermented paste, and fermenting the paste at 40 to 50°C for 50 to 60 minutes; and a baking step of putting the secondly fermented paste in an oven, and baking the paste at 200 to 300°C for 10 to 30 minutes. The present invention enables to provide the powdered bread which has a good taste, smell, and chewy and has various nutrients required for a human body by adding the powder and the green tea powder.</p>
