The present invention relates to a method for increasing the content of paradol in a substrate by culturing a specific microorganism in a substrate containing shogaol, and a substrate with increased content of paradol prepared thereby. Shogaol contained in a substrate can be bio-converted to paradol quickly, economically and efficiently in a short period of time when adopting the method of the present invention, thus the increased paradol can be employed as materials to ameliorate various brain diseases, such as improving cognitive function or the like. According to an embodiment of the present invention, the content of paradol in a substrate containing shogaol can be increased by culturing, in the substrate, Saccharomyces bayanus, Pichia fermentans, Pichia jadinii, Candida boidinii, Saccharomyces dairenensis, Pichia anomalus, Pichia anomala, Saccharomyces servazzii, Candida lipolytica, Pichia kudriavzevii, Candida glabrata, Candida saitoana, Pichia ohmeri, Pichia pastoris, Bacillus licheniformis, Bacillus amyloliquefaciens, Bacillus methylotrophicus, Mucor circinelloides, Mucor racemosus, Aspergillus terreus, Aspergillus fumigatus, or Aspergillus flavus. |
