The present invention relates to a method for preparing soy-marinated ginseng. The method includes the steps of: (a) preparing ginseng slices by cutting fresh ginseng; (b) adding dextrin to the ginseng slices; (c) separating the solid ginseng and the ginseng syrup; and (d) mixing the solid ginseng with soy sauce seasoning and heating the mixture. The present invention can maintain the original form of the ginseng while extending the shelf like and enhancing the palatability and physical properties.
