摘要 PROBLEM TO BE SOLVED: To provide a manufacturing method of egg yolk-containing liquid having excellent flavor and richness of egg yolk while heating treated, and to provide a manufacturing method of egg yolk-containing food having excellent flavor and richness of egg yolk manufactured by using the egg yolk-containing liquid.SOLUTION: There is provided a manufacturing method of egg yolk-containing liquid by conducting a temperature rising heating treatment of an emulsion where egg yolks of 5 to 60 wt.%, oil and fat of 10 to 30 wt.% and water are mixed, from a temperature range of less than 60°C to maximum heating temperature selected from 60 to 80°C at a rate of temperature rise of 0.05 to 6°C/minutes, and holding at the maximum heating temperature for less than 5 minutes. The egg yolk-containing liquid has excellent flavor and richness of egg yolk and an egg yolk-containing food having excellent flavor and richness of egg yolk is obtained by blending the egg yolk-containing liquid with egg yolk-containing food.
