PROBLEM TO BE SOLVED: To provide a noodle string cutting device in which the binding between noodle strings can be reduced in steaming, and the noodle strings can be stacked on a transfer conveyor so as to be uniformly gelatinized generally.SOLUTION: A noodle string cutting device of the present invention includes: a pair of cutting blade rolls for cutting noodle strings from noodle sheets by rotating in the contradicting direction while being interdigitated; stripping tooth arrangements for coming into abutment with the outer circumference of the cutting blade rolls at different positions in the rotation direction; and a chute member disposed corresponding to the fall positions of the stripped noodle strings by the stripping tooth arrangement. Further, the chute member of the noodle string cutting device in the present invention is disposed so as to have at least two sets in the group where the chute member is disposed according to the fall positions of the noodle strings stripped off by either one of the stripping tooth arrangements about a group of the stripping tooth arrangements adjacent to each other.
